Prawns Fried Rice

Chocolate Fudge

INGREDIENTS

2 cups of cooked basmati rice
150 grams prawns
1 tsp light soy sauce
1/4 tsp pepper powder
2 tsp virgin coconut oil
1/2 cup chopped mixed vegetables (carrots, beans, and green peas)
1 tbsp finely chopped onion
1 spring onion greens
1 tbsp finely chopped garlic
1 tsp light soy sauce
Salt to taste

METHOD

  1. Heat a small pan with 2 tsp of virgin coconut oil. When the oil heats, add prawns and stir-fry for 3 minutes and keep it aside.
  2. Heat a wide pan over high heat, and add virgin coconut oil.
  3. When the oil heats, add chopped garlic and stir well till it turns into light golden brown.
  4. Also, add onion and fry it well.
  5. Now add mixed vegetables and fry till they are cooked.
  6. Again turn the heat to high, add pepper powder (1/2 tsp only), salt, and soy sauce, and give a quick stir.
  7. Then add the cooked prawns and saute well.
  8. At this stage, add rice and mix well for 1 or 2 mins.
  9. Then add vinegar and 1/2 tsp of pepper powder and mix well for one minute or until well combined.
  10. Check the salt, if needed.
  11. Finally, garnish prawn fried rice with spring onion greens and switch off the heat and serve hot. Enjoy!
